About Lemon-grass

The whole plant can be used: the leaves as well as the bulbous stem (or bulb) close to the ground. The bulbs are the primary commercial portion of the plant.  When you add lemon grass leaf into phyto-greens juicing, you use just about 50% section of one leaf which looks like a 'long grass'.  The pungent chlorophyll from just a 50% portion of the leave is sufficent unless you wish for a more 'overwhelming' taste.

The bulbous stem is that part of the herb which is used in many Indo-Chinese recipes, especially in Thailand.  Here is some information on this herb from a Thai perspective.
